At Annamma’s Keralan Kitchen, Annamma Cheriyan will teach you how to create authentic Indian cuisine in a relaxed and welcoming Farmhouse kitchen situated just outside Wells in Somerset.
Annamma was born and brought up in the Southern Indian state of Kerala and learnt to cook at her mothers side. She has a real aptitude and passion for all food, not just Indian, and her passion really comes across as she teaches. There are plenty of tips and anecdotes along the way which make for an enjoyable and light hearted experience.
The Keralan Kitchen was founded in April 2006. Annamma had been thinking of a way of imparting her knowledge to those with a love of food and when she spoke, in passing, to family friend Joanna Taylor, Joanna offered the use of her large farmhouse kitchen and agreed to take care of the 'business' side of things, the rest, as they say, is history . . albeit recent!
Lessons are designed with a 'dinner party' in mind, and mainly have a rice, vegetable, dhal or pulse based dish and, with the exception of vegetarian courses, a meat dish. There are always poppadums with a pickle, chutney or raita. Annamma has not only designed the menu's to be nutritionally balanced, but all dishes compliment each other in taste and colour, the dishes are a joy to behold and of course eat.
The lesson is spent creating a wide variety of interesting dishes while learning the numerous and unique cooking techniques needed to master Indian cuisine. You then retire to the dining room where you dine on the sumptuous meal you have helped to create and discuss the lesson with your fellow classmates. The meal will be followed by a light pudding and coffee.
The course is split into eleven lessons, each lesson covers a different main dish with accompaniments as shown on the menu page. You can enrol for all eleven lessons or just those that particularly interest you. Each lesson is for a maximum of ten people so it is advisable to book early. The cost of each lesson is £39.95, payable in advance, which covers the lesson, two course meal and coffee.
Daytime lessons begin at 10.00 a.m. with the morning spent on food preparation and cooking, there is short coffee break during the morning, a chance to further acquaint yourself with your classmates, and lunch is served at approximately 1.00 p.m. Lessons usually finish around 2.30 p.m.
Evening lessons begin at 6.00 p.m., with coffee & biscuits, and finish around 10.30 p.m.
At the end of the lesson you will be given a recipe, which includes all the information you need to recreate the dishes for six people.
